Many people struggle with having no time in the morning for breakfast. This 5 minute breakfast sandwich is so simple to make and can easily wrapped up to eat on the go – quicker than a trip to Starbucks drive-thru. Excellent source of protein, whole grains, and an opportunity for some more veg.
It may be possible to make the eggs in a small bowl (using a plate or plastic wrap as cover), however I recommend using mini-ramekins with lids. Microwave times will vary, so it may take some adjustment of the cooking time when you first attempt.
Customize the flavor with different seasonings and toppings. For example adding garlic powder or chili lime into the eggs, or a bit of soy sauce, mushroom, and teriyaki. A thousand different themes to keep it interesting – hot sauces, peppers, salsa, ketchup, or BBQ. If you prefer lower carbohydrates, swap the English muffin for a low carb bread.

5 Minute Breakfast Sandwich
Ingredients
- 6 oz. ramekin with lid
- 1 Egg
- 1/4 cup liquid egg whites
- 2 oz. natural lean deli ham or turkey
- 0.5 tsp. red chili flakes (optional)
- Dash of salt (optional)
- Dash of black pepper (optional)
- 7 g sun dried tomato
- Arugula, 0.25 cup
- Whole Grain/Sprouted English Muffin (Ezekiel), 1 muffin
Instructions
- Slice English muffin in half and place in the toaster. While it’s toasting:
- Place the ham in the bottom of a 6oz. ramekin, then crack the egg on top. Gently pierce the egg yolk with a fork.
- Pour in egg whites, then sprinkle on sun dried tomato. Add salt, pepper, and red chili flakes as desired.
- Place the lid on the ramekin and microwave for 1 minute at FULL powder.
- Remove the lid and gently push on the egg with a fork. (There will still be some liquid in the ramekin.)
- Re-cover ramekin and cook for 1 minute at HALF power.
- Remove ramekin from the microwave and remove lid. Gently separate the egg from the sides of the ramekin with fork.
- Remove English muffin from toaster and place one half on top of the ramekin. Then, flip the ramekin over to remove the egg.
- Top the egg with arugula and other spices/toppings as desired, then add the other half of the English muffin.
Notes
- Nutrition per sandwich: 350 kcal 35P | 7F | 35C
- Microwave times can vary depending on the power of you microwave, so double-check eggs after the second minute of cooking.
- Make sure the ramekin is no more than 3/4 full to avoid spill out during cooking.
