Because who doesn’t love bread? Infused with almond and Fuji apple, this low-sugar whole grain apple bread is a satisfying afternoon snack or delicious treat on a weekend ruck. Skip the Starbucks and give this a go.
Notes about the recipe:
The combination of stone ground whole wheat plus almond flour provides the bread with a heartier, nuttier taste. However, white flour or a gluten-free flour will also work.
For the vanilla protein powder, utilize a blend of egg, whey, and casein (see recommendation in recipe). Pure whey and pure casein are more heat sensitive do not bake well. A plant-based protein blend will likely work.
Although the apples and applesauce provide a hint of sweetness, this bread has very low sugar. If you want this to taste more like a desert, add a tablespoon of dry sweetener such as Splenda, monkfruit, or Swerve. Regular sugar also works, but will change the nutrition.
For baking, I used a glass 9×5 loaf pan lined with parchment paper and lightly misted with coking spray. This allows the loaf to easily pop out of the pan. If your pan is metallic, cooking time may vary. Start checking at 30 minutes with a toothpick test.
After the loaf cools, it can be stored in the fridge covered for up to a week…..but it won’t last that long. 😉
This bread can be re-heated in a toaster oven or warmed for a few seconds in the microwave. Highly recommend topping with a smear of almond butter or peanut butter, or have with some yogurt and more applesauce. Yum!
Whole Grain Apple Bread
Ingredients
- 76 g (0.5 cup) whole wheat flour
- 56 g (0.5 cup) almond flour
- 34g (1 scoop) Vanilla Bean Trutein (20% off with code “Modus20”)
- 92 g (0.75 cup) liquid egg whites
- 140 g (0.5 cup) unsweetened applesauce
- 2 tbsp. low-fat sour cream
- 2 tsp. vanilla extract
- 2 tsp. baking powder
- 1/2 Gala or Fuji apple, chopped/minced
- Optional: 1/2 tsp. of cinnamon, 1 tbsp. Splenda or any other dry sweetener
Instructions
- Pre-heat oven to 350F
- Line a 9 x 5 loaf pan with parchment paper and spray with cooking spray.
- In a bowl, whisk together almond flour, whole wheat flour, Trutein, baking powder, and cinnamon.
- In a separate bowl, whisk together egg white, sour cream, vanilla extract, applesauce, and sweetener. Continue whisking until the mixture in uniform and lightly frothed.
- Add the wet mixture to the dry mixture until combined, then fold in the chopped apple.
- Pour mixture into the loaf pan and bake for 35 minutes, or until center is cooked using toothpick test.
- Allow to cool in the loaf pan for 20 minutes before popping out and cutting.

- Nutrition for the whole loaf: 957.5 Cal, 64 g protein, 104 g carbs, 34 g fat Nutrition per serving (1 slice of 7): 139 Cal, 9 g protein, 15g carbs, 5 g fat
- This bread is only slightly sweet without the sweetener, adding 1 tbsp. of Splenda or other sweetener will make it taste more like a desert.
- Trutein is a blend of whey, egg, and casein protein which works very well in baking recipes. Whey or casein alone is unlikely to work in this recipe. A plant-based protein will likely work
