Cocoa protein crepes and berries are a fast treat to satisfy a sweet tooth while supporting protein intake.

This recipe uses Body Nutrition Trutein protein powder (ideal texture and taste for baking). If you don’t have chocolate protein powder available, other flavors work as well. I recommend checking out Vanilla Bean, Cookies & Cream, or Red Velvet Cake. Trutein is a blend of whey, egg, and casein protein. You may need to adjust the amount of milk and cooking time with a different type of protein.
This recipe scales up well if you want to make a heap of crepes. Store the extras in an airtight container in the fridge for up to a week. Separate each crepe with parchment paper, and reheat in the microwave for a few seconds.
Adjust the macros for these cocoa protein crepes by changing up the toppings and fillings. For more protein, spread on nonfat Greek yogurt. Add more fruit for additional carbs. For fats, spread on nut butter. Peanut butter and banana would be a great combo.
Cocoa Protein Crepes
Ingredients
- 22 g Chocolate Protein Powder (Trutein) use code “modus20” at checkout for a discount
- 66g Liquid egg whites
- 1 tbsp. cocoa powder
- 2 tbsp. unsweetened almond milk or flax milk
- 1 cup fresh or frozen strawberries
Instructions
- Whisk together chocolate protein powder, cocoa powder, egg whites, and milk in a bowl until smooth, 1-2 minutes.
- Taste and add sweetener, such as Splenda or stevia, if needed.
- Heat a small nonstick pan on low-medium heat and spray with cooking spray. Ensure it is well covered so the crepes won’t stick to the pan.
- Scoop out about ¼ cup mixture on pan and swirl to spread to form a circle. (Swirl to spread the mixture around quickly to spread into a thin circle; This way you have a thin fold-able or roll-able crepe)
- Cook for about 1-2 minutes until top surface edges appears slightly dry.
- Flip carefully and cook other side for 1 minute.
- Remove from pan and repeat with remaining batter.
- Warm up strawberries (fresh or frozen) in the microwave, about 1 minute. Chop and place on top of crepes.

This recipes scales up well. Store additional crepes in the fridge (separated by parchment paper) and warm in the microwave.
