Broccoli Beef Stir Fry
Juicy strips of beef infused with garlic, ginger, and soy. Enjoy this healthy take on a classic Chinese dish with 30 g protein per serving.

Ingredients
- 2 lbs. (907g) top round beef (trimmed, choice), cut into thin slices
- 2 large broccoli crowns, cut into florets
- 1/2 cup low sodium soy sauce
- 2 tsp. sesame oil
- 4 cloves garlic, minced
- 1 tbsp. ginger root, minced
- 1 tbsp. black bean garlic sauce
- 3 tbsp. hoisin sauce
- ½ tsp white pepper
- 2 scallions, chopped (for garnish)
Instructions
- In a small pot, combine soy sauce, garlic, ginger, Swerve, hoisin, and black bean sauce. Bring to a boil then reduce to medium heat. Continue heating until liquid volume decreases, and the sauce is slightly syrupy in texture.
- While the sauce is reducing, add 1/2 cup of water to a large wok or frying pan and heat to high. When water begins to boil, reduce heat to medium and add broccoli florets. Cover and steam for 5 minutes. Remove broccoli from wok and set aside in a bowl. Remove excess water from the wok and dry it.
- Heat the wok to medium high. Add sesame oil, and white pepper to the wok.
- Add beef strips and cook to about 75%, until nearly all pink disappears. Transfer beef to a large bowl and cover with aluminum foil, set aside for 5 minutes. Take any cooking liquids remaining in the wok and add them to your sauce pot.
- After 5 minutes rest time, there will be liquid in the bottom of the beef bowl. Add it to the sauce pot.
- Return the beef and the broccoli to the wok and heat to medium.
- Pour your sauce onto the broccoli and beef, gently stirring to coat.
- Turn off the work and top the dish with scallions.
- Enjoy!

- Nutrition for the entire batch: 1608 kcal, 237 g protein, 60 g carbs, 46 g fat
- Nutrition per serving (8 servings): 201 kcal, 30 g protein, 7 g carbs, 6 g fat
- For even faster prep, rather than cook fresh broccoli you could use a microwave bag and toss it in at the end.
- The black bean garlic sauce adds a richer flavor, but it’s ok to omit if you don’t have it available. Add more garlic!
- Recommended pairings: white rice, brown, rice, or cauliflower rice (lower carb option)
