Classic ginger, molasses, cinnamon, and nutmeg flavors combined with vanilla protein powder provide amazing flavor with the right macros. Perfect with a cup of coffee and a healthy swap for a coffee shop pastry.
High Protein Soft Baked Ginerbread Cookies
Ingredients
- 80 g Trutein vanilla protein powder *Use code “Modus20” at checkout for a 20% off discount*
- 28 g White chocolate
- 15 g Gluten-free white flour
- 1 1/2 tsp Ground ginger
- 1/2 tsp Cinnamon
- 1/8 tsp Nutmeg
- 15 g Sunflower butter
- 9 g Blackstrap molasses
- 50 g Unsweetened flax milk (or almond milk)
Instructions
- Preheat oven to 250F and line a baking sheet with parchment paper
- In a food processor, pulverize white chocolate into very small pieces/powder
- In a large bowl, mix all dry ingredients together, including spices and white chocolate
- In a separate bowl, combine sunflower butter, molasses, and flax milk. Blend with a hand mixer until liquid is uniform.
- Add liquid mixture to dry mixture and thoroughly combine using the hand mixer until dough clumps form.
- Roll dough into one large ball and place on a piece of parchment paper.
- Roll out dough into a square, just under 1/4″ thick.
- Punch out your cookies with you desired form. If there is a lot of extra dough after punching, re-roll the remainder out and then punch out more cookies.
- Optional: Add sprinkles to the cookies. Gently press them into the surface so that they do not fall off after baking
- Place cookies onto parchment-lined baking sheet and bake for 4-5 minutes
- Allow them to cool completely on the baking sheet before eating.
